Produced in the cellars of the former Saint-Nicaise abbey (13th century) in Reims, the Taittinger Comtes de Champagne Blanc de Blancs 2005 is distinguished by a very pale, yellow color and fine, light bubbles that rise steadily to form a delicate ring of foam. The nose initially presents a fresh, refined tangerine-like fruitiness that develops in more mature notes of fruit, raisin pastries and candied fruit. The attack is lively and the mid-palate is full-bodied and rich, with hints of spice and liquorice throughout its long, refined finish.
Perfect for a truly special celebration, the Champagne pairs very well with seafood, shellfish and (of course) caviar.
