Wild sea scallops, harvested off the coast of Canada in the icy waters of the NW Atlantic, are prized for their large, sweet, succulent meat. Back in France, we smoke them over beechwood to heighten their flavor and impart a silky texture. Served unadorned, they make spectacular hors d'oeuvres, or slice and serve on baguette toasts with a touch of creme fraiche.
