Coconut Cake

The West has Marco Polo to thank for “discovering” coconut. We have our pastry chefs to thank for this light, sweet, refreshing recipe! Moist, buttery, with a hint of lemon and lots of cool, fresh coconut. Delicious with afternoon tea or after-dinner coffee. 10-12 oz. loaves are baked fresh every day. Serves 5-6.
