A Beautiful Bowl
Poke bowls are a beautiful and healthy meal, originating from Hawaii and literally translated to “to slice,” hence explaining the bowl of sliced fish. Since its origin, not only have poke bowls grown in popularity, they’ve grown in variety, too. We’ve brought together three recipe ideas for gourmet Petrossian style poke bowls that will bring your next bowl to life.
Starting with the basics, with a Petrossian twist, we recommend a white flavorful rice such as jasmine rice for your poke bowl's base. Ensure the rice is light and fluffy, and preferably cool before you add the fish and other ingredients. For our beautifully basic bowl, we’re using ingredients that will please even the pickiest of eaters first making their foray into poke. Keep it simple, but flavorful, with high quality ingredients that will make all the difference, taking the concept of basic from boring to beautiful.
Once the rice is cooked and cooled, select a mild flavored lettuce with a slightly sweet flavor. Think butter over bitter, buttercrunch instead of arugula. The leafy greens will add a nice texture and crunch alongside the rice and the mild buttery flavor of a buttercrunch lettuce will please the palate. Sliced crisp cucumber goes along with the lettuce and fish well, and we recommend sticking to salmon for this variation.
Our Tsar-Cut Smoked Salmon is the most tender, most flavorful part of our North Atlantic salmon. Our unique, beechwood method transforms this exceptional cut into a rich, savory-sweet delight. Add some of our salmon roe, and a wedge of lemon, sprinkle with a selection of seeds and a drizzle of soy, and serve! When someone is new to poke bowls, not everyone is adventurous and this dish is a great way to introduce them to this style of cuisine that will make even the seafood skeptic swoon.

Exciting Additions
We love a basic, beautiful poke bowl for a quick meal, but once you’ve mastered the basics, it’s time to level up. Creativity is always welcome, and with Petrossian, it’s easy to build on any bowl with different ideas and varieties of seafood that can expand on the classic flavors.
A California-style variation may include sliced avocado. Add some edamame for a different flavor, instead of sliced cucumber. And consider adding alongside the classic smoked salmon and roe something a little different. Perhaps a succulent smoked cod would be to your liking. Naturally moist and meaty Black Cod, or northern Pacific sablefish, is a triumphant entry on our smoked fish menu. Under the care of ever-so-patient smokehouse chefs, it develops a subtle sweetness with just a hint of salt.
Slice up mini tomatoes - we prefer grape tomatoes for their not-to-sweet yet juicy pop, add a dash of wasabi for a just right spicy kick, and grab your chopsticks and enjoy! Green tea is perfect alongside this bowl, cool in the warmer months or hot in the cooler ones, and this bowl becomes an all-season favorite.

Spice It Up
If spice is your thing, this poke bowl is for you. Take the same base, edamame, and roe to start. From there, swap the classic smoked salmon with one of our spicy varieties. Our Tsarina-Cut Chipotle Smoked Salmon begins with fresh, hand-picked jalapeño chiles, dried and smoked into hearty chipotle peppers. Then we infused this fiery mixture into our wild North Atlantic Salmon and smoke it as slow as we can. This way, we can lock in the smoky chipotle flavor, while preserving the plump cut of fish.
For a little more kick, try our Tsarina-Cut Jalapeño Smoked Salmon. With medium spice, this variation begins with hand-picked jalapeños, cut fresh and infused directly into a plump, juicy cut of wild North Atlantic Salmon. Then we get to work, carefully smoking the fish with our "slow & steady" method till the rich flavors of cedar meld with the fiery spice of the peppers.
If that all sounds just a little too spicy for you, we also offer a Tsarina-Cut Ponzu Smoked Salmon with a delicate, tangy citrus flavor that’s perfect for poke. We've captured the complex sweet, sour, salty, tangy flavor of fresh ponzu within our beloved Tsarina-cut of North Atlantic Smoked Salmon. Regardless of which smoked salmon you choose, finish off your poke bowl with a spoonful of caviar to make it truly incredible.
We recommend our new, Royal Persicus Caviar. Originally from the southern coast of the Caspian Sea, Persian caviar, known as Persicus, is now a rare, prestigious breed, which combines the firm yet melting texture of Ossetra with an exquisite creaminess, freshness, and savory gush of brine. It’s a wonderful addition to any poke bowl that brings out a flash of flavor you’d otherwise miss with traditional ingredients alone.
