Lox vs. Smoked Salmon

While on the topic of smoked salmon, it’s a good idea to explain the difference between lox and smoked salmon. While these variations of salmon are often spoken of interchangeably, smoked salmon is cured or brined and then smoked while lox is cured but not smoked. The difference is in the taste, with lox having a saltier taste. Smoked salmon can be hot smoked (also known as kippered, and flakier in texture) or it can be cold smoked (what you are likely used to having sliced).
